Katie Escobar, 34, of Lubbock, passed away on Wednesday, March 11, 2026.
Katie will be remembered for her vibrant personality and the joy she brought to everyone around her. She had a deep love for her only son, Kaiven Mikhal Escobar, with whom she created her most important memories during their cherished time together. She enjoyed decorating for every holiday, ensuring each season was celebrated with creativity. Katie took pride in her nails and makeup and often relaxed by watching her favorite show, Baddies.
She also loved spending time in the kitchen, where cooking for those she cared about brought her great happiness. She was especially proud of the potato salad recipe she learned from her mother, and her family always joked that they knew she was serious about her boyfriend when she made them chicken tacos. Some of her most treasured memories were made with her crew on For Real Street in Sethward, where they were “not having a party.” A breast cancer survivor, Katie was a true warrior whose strength and spirit inspired all who knew her.
She is survived by her paternal grandparents Mary Hill and Grandpa Smokey, her father Ernesto Jimenez and his wife Ana, and her little sister Justine Jimenez and her husband Eric. She is also survived by her maternal grandmother Henrietta Escobar, her late grandfather Indio, her mother Michelle Escobar and her husband Joel, and her big sister Kristen and her wife Jessica. Above all, she leaves behind her pride and joy, her son Kaiven Mikhal Escobar, along with numerous tías, tíos, cousins, nieces, nephews, and extended beloved family.
