Joseph Michael Jaszczak, 87, of Apple Valley, MN, passed away peacefully on Saturday, March 7, surrounded by the love of family and the comfort of a life well lived. Joe was a devoted husband to Cathy, and a proud and loving father, grandfather, and great-grandfather. He was also a cherished sibling, loyal friend, and a valued member of the community whose kindness and warmth touched many lives.Joe will be remembered for his steady presence, generous spirit, and the deep love he had for his family. His legacy lives on in the many people who were fortunate enough to know him.Survived by his loving wife of 47 years, Catherine; children, Cathy (Bryan) Manning, Eileen (Erik) Paulson, Bob (Idha) Jaszczak, Patricia (Jeff) Knutson, Tim (Yevette) Jaszczak, Carol (Rod) Vredenburg, Daniel (Renee) Jaszczak;13 Grandchildren;12 Great-grandchildren; and surviving siblings Leo Jaszczak and Angie Gibson.He will be deeply missed by his many nieces, nephews, extended family members, and dear friends whose lives he touched with kindness and love.Mass of Christian Burial will be held 11:00 AM Wednesday, March 25, 2026 at Church of the Risen Savior, 1501 County Rd. 42 E., Burnsville, MN with a visitation starting at 10:00 AM. Private Interment at Ft.
